Eclair Squares.

This was one of the more complicated recipes we make (since we needed to melt butter. lol) But it was... AMAZING! Dude, I say that a lot, but food is amazing!


All you need is 1 box of honey graham crackers, 2 boxes (small) of instant vanilla pudding, 3 cups of cold milk (again, we used soy milk) and 1 small cool whip container. Then for the glaze, you'll need 6 tablespoons of cocoa, 5 tablespoons of butter, 1 teaspoon of vanilla, 3 tablespoons of milk, and 2 cups of powdered sugar.


First melt the butter, that way you can do other stuff during.


Then take the pudding mix, milk, and cool whip and mix well.


Lay graham crackers on the bottom of a pan and then pour the contents onto the crackers.

Then lay more graham crackers ontop of the filling.

Then you can start on your glaze. Put the cocoa powder, powdered sugar, milk, vanilla, and melted butter into a bowl.

(The rest of the ingredients are under the powdered sugar.)

Once you have it mixed well, quickly pour and spread the glaze onto the filling and crackers, before the glaze sets.


Amazingness!!!


You'll need to have it chill for at least 3 hours but it's best to have it sit around 8 hours, preferably overnight.
We also talked about how it's healthier than a regular eclair because it's not held in a puffy pastry, and even though you'd assume the crackers would make it crunchy, no, the crackers soak up the filling and make it kinda spongy. 


This week has been Dr. Seuss week at our school. Today was dress as your favorite Dr. Seuss character..
